Is there any better of a time to enjoy healthy, plant based meals than while you are outside enjoying nature? Traditional camping meals typically include a lot of animal products, so we have selected 3 completely vegan recipes to choose from for your next camping adventure!
Campfire Baked Sweet Potatoes & Chili

Ingredients
- 4 medium sweet potatoes
- 1 onion, diced
- 1 tablespoon olive oil
- 15 oz can kidney beans, drained
- 6 oz can tomato paste
- 1/2 can beer (Or broth)
- 1 tablespoon chilli powder
- 1/2 tablespoon cumin
- 1/2 teaspoon salt
- Toppings of choice
Instructions
- Wrap each potato in heavy duty foil and nestle them into the embers of the campfire, rotating occasionally to allow them to cook evenly.
- Warm oil in a large pot over medium heat. Add diced onions and sauté until soft. Add beans, tomato paste, beer or broth, and spices. Stir to combine, then simmer for 15-20 minutes.
- After about 30 minutes the potatoes should be cooked through. Cut a slit in the potato then top with chili, onions, and any other desired toppings.
Red Lentil Sloppy Joes

Ingredients
- ½ tablespoon oil
- 1 small onion, diced
- 1 Anaheim pepper, diced
- 2 tablespoons tomato paste
- 3 cloves garlic, minced
- ½ cup red lentils
- 1 ½ cup water, or broth
- 1 tablespoon mustard
- 1 tablespoon maple syrup
- 2 teaspoons apple cider vinegar
- 1 teaspoon vegan Worcestershire
- 1 teaspoon chili powder
- ½ teaspoon salt
Instructions
- In a medium pot heat oil, then add chopped onions and Anaheim pepper. Sauté until soft, then add tomato paste and garlic and cook for a few more moments.
- Add red lentils and 1 1/2 cups of water to the pot. Bring to a boil, then reduce to a simmer. Cook for 10-15 minutes, stirring occasionally until the lentils are tender.
- Add mustard, maple syrup, apple cider vinegar, Worcestershire, chili powder, and salt and stir to combine. Simmer for 3-5 minutes to thicken the sauce.
- Serve on toasted buns!
Apple Pie Quinoa Porridge

Ingredients
- 1 cup quinoa
- 1 apple, chopped
- 1 1/2 cups coconut milk
- 1/2 cup water
- Pinch of salt
- 1 teaspoon cinnamon
- 1/2 teaspoon vanilla
- 2-3 tablespoons maple syrup
- 1/4 cup walnuts
- Toppings of choice
Instructions
- Rinse the quinoa and add 2/3 of the apples, coconut milk, water, salt, and cinnamon in a pot and bring to a boil.
- Once the quinoa starts to boil, reduce to a simmer and cover until most of the liquid is absorbed.
- Remove from heat and stir in vanilla and maple syrup.
- Top with remaining apples and walnuts, cinnamon, and any other toppings you would like!
