Quinoa Salad Jars

Salad Ingredients

  • 2 cups cooked quinoa
  • 2 pints grape tomatoes
  • 2 large cucumbers
  • 1-2 jars of sun dried tomatoes or peppers
  • 1 cup feta cheese

Lemon Dill Dressing

  • 3/4 cup olive oil
  • 1/4 cup water
  • 2 tablespoons white vinegar
  • 1 clove garlic
  • 1/2 teaspoon salt
  • fresh lemon juice
  • Dill, to taste

Blend all the dressing ingredients together in a small bowl. To build the jars, layer some dressing, tomatoes, quinoa, cucumbers, sun dried peppers, feta, and any other ingredients you might want!

Seal the jars in the fridge for up to 4 days.
