Not only are these energy bites both healthy and delicious, but they are also perfect for camping! This no-bake recipe can be made right in your RV kitchen, and these energy bites are great as a quick and nutritious snack for kids or hikers on the go.
Directions
Stir all ingredients into a large mixing bowl
Cover the bowl and refrigerate for 1-2 hours. Once chilled, roll into balls by hand.
Enjoy! Refrigerate in a sealed container for up to 1 week or freeze for up to 3 months.
What You Need
- 1 cup old fashioned oats
- 1/2 cup peanut butter
- 2/3 cup shredded coconut
- 1/2 cup ground flaxseed
- 1/2 cup semi-sweet chocolate chips
- 1/3 cup honey
- 1 tablespoon chia seeds
- 1 teaspoon vanilla extract
Make It Your Own!
You can really add or remove anything you feel like to these no-bake energy bites. If you are not a fan of peanut butter, you can sub in any type of nut butter, like almond, cashew, or sunflower seed butter, to name a few.
Add some chopped-up pieces of your favorite dried fruit! Or add spices like cinnamon or pumpkin spice to add to the flavor.
You can omit the coconut flakes by adding more oats until you reach the desired consistency.


In place of honey, use maple syrup instead. These make vegan energy bites, and the maple flavor pairs nicely with pumpkin spice.
You can even make granola bars, instead of bites, by pressing the mixture firmly into a parchment-lined baking pan and allowing it to chill in the fridge.
