Chicken Avocado Mango Rolls

Peanut Sauce Ingredients

  • 1/4 cup unsweetened coconut milk
  • 1/2 cup peanut butter
  • 1 tablespoon sesame oil
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 clove minced garlic
  • 3 tablespoons gluten free soy sauce
  • 3 tablespoons warm water

Roll Ingredients

  • 1 head of lettuce
  • 1 1/2 cup cooked shredded chicken
  • 1/2 large cucumber, chopped
  • 1 large carrot, chopped
  • 2 ripe avocados, sliced
  • 1 large ripe mango, sliced
  • 1 lime
  • Rice paper

Instructions

  1. To make the peanut sauce add all the ingredients together in a small bowl and whisk together. Taste and season with salt, lime juice, and add in water until you have reached your desired consistency.
  2. Submerge your rice paper one by one into warm water. Allow it to sit for 20-60 seconds, until they are soft and flexible. Lift from water and lay on a flat clean surface.
  3. Fill your wraps! Fill a large lettuce leaf across the bottom third of the paper, add chicken, mango, avocado, carrot, cucumber, and some mint and cilantro! Squeeze some lime juice over top.
  4. To wrap, fold the bottom of the rice paper up over the filling, then fold the ends up. Roll it like a burrito, press the ends firmly into the roll, and transfer to a plate to serve and enjoy with peanut sauce on the side!

Tomato Clubs

Ingredients

  • 4 plum tomato’s
  • 2 slices swiss cheese
  • 4 cooked bacon strips
  • 4 slices deli turkey
  • 4 lettuce leaves
  • 1/2 medium avocado
  • Pepper

Instructions

  1. Cut 3-5 crosswise slices into each tomato, leaving the bottoms intact.
  2. Fill with cheese, bacon, turkey, lettuce, avocado, and sprinkle with pepper.

Greek Yogurt Chicken Salad Stuffed Peppers

Ingredients

  • 2/3 cup Greek yogurt
  • 2 tablespoons Dijon mustard
  • 2 tablespoons seasoned rice vinegar
  • Salt and Pepper
  • 1/3 cup chopped parsley
  • Cooked chicken, shredded
  • 4 stalks celery, cubed
  • Scallions, sliced
  • Cherry tomatoes, quartered
  • 1/2 cup cucumber, diced
  • 3 bell peppers, halved and seeds removed

Instructions

  1. Whisk together the Greek yogurt, mustard, rice vinegar, salt, and pepper in a medium bowl. Stir in parsley.
  2. Add the chicken, celery, scallions, tomatoes, and cucumbers. Stir to combine
  3. Divide the chicken salad among the bell peppers, garnish with vegetables and serve!

Chicken Cucumber Pitas

Ingredients

  • 2 cups cubes chicken breast
  • 1 large cucumber, sliced
  • 1 medium tomato
  • 1 small sweet red pepper
  • 1/2 cup cubed cheddar cheese
  • 1/4 cup chopped red onion

Dressing ingredients

  • 1/2 cup ranch salad dressing
  • 1/4 cup mayonnaise
  • 1 tablespoon Italian salad dressing
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 12 pita pocket halves

Instructions

  1. Combine dressing ingredients in a small bowl.
  2. In a large bowl, combine the filling ingredients. Pour dressing over chicken mixture and toss to coat evenly. Fill each pita, and enjoy!
